Easing Up…Snippets from our first days of freedom after lockdown.

It’s been a busy week as we have been freed from the 200 meters around our homes. Having the freedom to take a walk has lightened my mood a bit even as I am still bracing for what might yet come. I haven’t yet ventured to the bigger cities in our area as we still have too many new cases of Covid19. This isn’t over yet…I have lots of blog posts in the works and today’s is going to be short and sweet. It includes an easy recipe and a few pictures from my walks as the rules here are easing up.

Involtini di Prosciutto Cotto e Asparagi

These are super easy to make. Thinly sliced ham, strips of Emmanthal cheese and fresh steamed asparagus. As an antipasto two pieces per person are enough in my opinion. Bake in a lightly greased dish at 350 Fahrenheit for around 20 minutes or until they are a bit crunchy on the outside. Buon Appetito!

  2. Whoo-hoo! So happy for you and your family that you can venture out. Plus gelato. Great to see your smiling face! Our son’s girlfriend is from the town of Cuneo. Looks like a lovely area!

      • So sorry, I thought I responded to this already but it’s not showing up. Mostly she misses her family in Cuneo. She’s not far away, getting her PhD at the university in Bern, Switzerland, where our son is a postdoc. She visited Seattle last spring and loved it here.
